What's the best way to deal with butchers?

I just started act III, and yeah, the first one kicked my ass a few times. He's too quick for deobombs (unless timed right), and I can't seem to manage dodging out of the way last minute, and doging early he just well... turns...and continues happily piercing me with his apparently super strong Radius & Ulnas... What am I missing?
